6 eggs
1 cup flour
1/2 tsp. salt
1 tsp. vanilla
1 tsp. orange zest (optional)
1/4 cup butter, melted
Preheat oven to 400 degrees F. Blend first six ingredients (milk thru orange zest) in a blender. Be careful to see that any flour clumps get well-blended.
Blend in butter a little at a time in order to temper the eggs.
Grease muffin tins well and distribute batter evenly between 24 tins (I did more like 18. Gimme Some Oven’s tins were slightly less than half-full. I used a 1/4 cup measuring cup and filled it almost full.) Bake for 15 minutes, or until puffy and golden on top.
Served with your favorite toppings. (Mine was a dusting of powdered sugar and triple berry sauce. I have other suggestions up top)
Vanilla Strawberry Jam

Serves 4
Ingredients
2 2/3 cups crushed strawberries
3 Tbsp Ball® RealFruit® Classic Pectin
1/2 tsp butter or margarine
3 1/3 cups granulated sugar
1/4 vanilla bean split in half lengthwise
1 Ball® FreshTECH Automatic Jam & Jelly Maker
Directions
Wash strawberries, drain, and remove stems and hulls. Crush berries one layer at a time using a potato masher. Measure required quantity of crushed berries and remaining ingredients for your recipe; set aside.
Sprinkle pectin evenly over bottom of the Pot fitted with the Stirrer. Add vanilla bean to crushed strawberries and pour evenly over pectin. Add butter/margarine to help reduce foaming.
Press jam button – the cook time will automatically default to 21 minutes. Press enter.
Wait 4 minutes for appliance to sound 4 short beeps indicating that it is time to add sugar. Add sugar gradually while Stirrer continues running. Place the Glass Lid on the Pot.
The appliance will continue to automatically stir your ingredients while it cooks. Stay within earshot of the Jam & Jelly Maker; the appliance will beep again at the end of the process signaling jam cooking is complete. Press cancel, unplug the appliance and immediately remove Glass Lid.
Remove Stirrer using a potholder. Skim foam, if necessary, from top of jam. Remove vanilla bean.
Enjoy now (within 3 weeks in refrigerator), freeze or preserve your jam and store for up to one year.
